You can set up your email client to only accept mail from addresses you designate as safe. Mail clients vary, so without knowing what you use I can't give you more specific instructions than that.
It depends whether you use webmail or POP3 or IMAP.
Yahoo and Gmail have good filters.
Thunderbird http://www.mozilla.com/thunderbird/ has an
effective and easy to use filter if you're using POP3
or IMAP.
Some email hosts let you block entire domains
(e.g. Nigerian scams)
